This blog could easily become a purely hummus related blog if I'm not careful and make sure I eat other foods. It is just so good and versatile! This is a fun version which uses my current favourite spice, cumin, and delicious roasted carrots. Its easy to make and has a deliciously rich, savoury flavour.

Roasted Carrot and Cumin Hummus |

Ingredients
- 2 carrots
- 1 can chick peas, drained and rinsed
- 1/2 tbsp cumin
- 1/2 tbsp lemon juice
- 2 cloves garlic
- salt and pepper
- 4-6 tbsp olive oil + small amount for roasting carrots
- Coarsely chop carrots, place on baking sheet, drizzle with a small amount of olive oil, and roast in oven at 400'F for 25 minutes
- Once roasted and softened, add carrots to food processor with the rest of the ingredients listed about, excluding olive oil, and pulse to combine
- Once ingredients form a thick paste, set food processor to a medium speed and drizzle in olive oil until the hummus reaches your desired consistency
- Adding in the juice of the canned chickpeas is another way to smooth out hummus if it is too thick and you want to avoid adding more oil
