Zesty, tangy, delicious, tzatziki is simple and easy to make. Tzatziki works as a dip, spread, or flavour boosting condiment and goes great with a multitude of ingredients.
Preparing the cucumber was the most time consuming part of this recipe, but do take the time to drain as much water out of it as you can.
Not that my Mediterranean Quesadilla needed the extra kick, but my tzatziki really complimented the regional flavours.

Ingredients
- 2 cups plain Greek yogurt
- 4 cloves garlic
- 1 large english cucumber, peeled, seeded and grate
- 1 tbsp fresh dill
- 1 1/2 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Description
- Prepare cucumber by peeling and cutting along length. Scoop seeds out as you would with a gourd. Grate cucumber and press into fine metal strainer to release as much water as possible.
- Add all ingredients to your food processor and blend until smooth. Be careful not to over blend as it may thin out the mixture and tzatziki is better thick and rich.
- Store in refrigerator once made, it will last in fridge for one week.
